Flavor & Uses: Liberty apples have a crisp, juicy texture with a well-balanced sweet-tart flavor. The flesh is fine-grained and aromatic, offering a refreshing, slightly citrusy tang. It has a more modern, dessert-apple flavor profile while maintaining the complexity of traditional varieties.
Liberty is excellent for fresh eating, where its juicy and crunchy texture stands out. It is also a good choice for baking, applesauce, and cider, as it holds its shape and develops a deeper sweetness when cooked. Its natural resistance to browning makes it great for salads and fresh slices.
Size & Color: Medium-sized (7–8 cm diameter). The apples are bright red over a yellow-green background, often with a slightly striped or mottled appearance.
Growth & Hardiness: Liberty trees are vigorous growers with a spreading habit, hardy to Zone 4–7. They produce annual, heavy crops and require some thinning to maintain fruit size and quality.
Harvest Time: Mid to late September. Liberty apples store well for 3–4 months, retaining their crispness and flavor.
Disease Resistance: Liberty is highly resistant to apple scab, with good resistance to fire blight, powdery mildew, and cedar apple rust. It is one of the most disease-resistant apples available, making it an excellent choice for organic orchards.
Breeding & Origin: Developed in New York, USA, in the 1970s as part of a disease-resistant apple breeding program. It is a cross between Macoun and a complex hybrid of Malus floribunda, bred for scab resistance and high fruit quality.

I would like to acknowledge the traditional keepers of the land on which our farm is located; Atikameksheng Anishnawbek and all other members of the Robinson-Huron treaty. I am deeply inspired by the practices and traditional ways of knowing of Indigenous people.
I am honored to try and continue their legacy of forming a reciprocal relationship with the land and mother earth as a whole. I will continue to strive to leave the land in better condition than when I acquired it so it can continue to give back for generations to come.
